Back in swing of things!

So it is Monday. Back to reality! Surgery went pretty good today. Things are crazy during those 5 hours, but when it is over we look back and think that was not so bad. When Jason and I got home from work, we had to watch the neighborhood children. They are great, but no one will need to rock me to sleep tonight. Hope the rain stops soon. I hate getting up when it is good sleeping weather outside. Hope everyone has a great week.:)

Family Day!

Jason and I started off our Saturday/cleaning day with my Daddy coming over. He is so wonderful. My dad came by to help us fix a few things around our house. I can ask him to help and he will always be there. I love my daddy so much!! After my dad left, Jason's mom and step dad came by. They were in Jackson sopping and stoppped by for a few minutes. After they left, Jason and I ran a few errands (WALMART RUN). We came home and put things away then headed straight to my sister's house to see our niece, Kennedy. She is getting to big. She does Hey and Bye Bye so good now. That sweet girl has the best personality. We hated to leave, but we has to continue our family day. We met Jason's dad and step mom at our house. We got in the car with them and went to meet Jason's sister for dinner at Bonsai. Great food and company. When we finally got home Jason and I were done. We don't remember actually laying down on our pillows. We might have slept sitting up for all we know. Family are wonderful and you never take them for granted but man they are tiring when you see all of them in one day:)

Cooking

So I have decided to cook more for my fabulous husband. So today we slept in and I made a big breakfast. We then cleaned the house and my husband did lots of yard work. Late afternoon, we went to church and then to the grocery store. On the way to the grocery store, my wonderful mom gave us her recipe for the heath bar cake. I already had a chicken recipe to try. It was chicken breast with crushed cheese nips. Both recipes were so easy and so good. I think Jason is starting to get spoiled:)Here are the recipes in case anyone wants to try them. I can do them so I know you can!

CHEESY BAKED CHICKEN

1 whole chicken, cut up or 8 pieces
1/3 c. oil
1 sm. box cheese nips crackers (7-8 oz. size)
1 1/2 tsp. garlic salt or 1 tsp. garlic powder
Black pepper to taste

Crush the cheese nips to fine crumbs. Place chicken pieces into a bowl and add oil, coating each piece. Add garlic salt or powder and black pepper to cracker crumbs; stir. Take chicken out 1 piece at a time and roll in cracker crumbs. Place onto ungreased cookie sheet and bake for 1 hour at 350 degrees. Turn the chicken over after 30 minutes. Serves 4.

HEATH BAR CAKE

1 German chocolate cake mix
1 squeezable caramel topping
1 can sweetened condensed milk
1 container Cool Whip
2-3 crushed Heath bars

Bake cake as directed in 13"x9" pan. While hot, poke holes throughout cake with end of wooden spoon. Pour caramel into holes, then condensed milk into holes. Let cool. Top with Cool Whip and crushed Heath bars.

MIcheal Phelps

Okay so tonight we will see if Micheal Phelps is able to continue winning the gold medal while breaking the world record at the same time. I cannot wait. I am so sleep deprived this week because all my favorite events have come on so late. I love it though. Hope everyone is enjoying the olympic games as much as I am. Have a great weekend:)

The Olympics

It is official, I have an addiction. I get in bed early every night with good intentions of going to bed early and being well rested for work. It never happens that way. I turn on the TV and get hooked. I have stayed up to 11 or 12 every night watching the olympics. I am addicted. The gymnastics and swimming are my favorites. I guess I will get some sleep this weekend when I am off work:) Hope everyone is enjoying the olympics as much as I am. Go USA!

Movie Night!

Today was a very rainy day. When I got home from work, Jason was there and it was still sprinkling outside. We decided to watch a movie and that turn into 2 movies. The young lady Abigail Breslin was in both. She is such a good actress. We really liked both. Jason was not too excited about Defenitly maybe, but when it ended he said "That was pretty good." Translation: I don't want you to make fun of me, but I really liked that chick flick.:)

Cleaning Day at Work!

Clean, Clean, Clean. Christina Miller, a very good friend of mine from UMC is now working with me at Eye Surgery and Laser Center. She is great. She has already picked up on what we do daily. My stress level has gone from a 10 to a 2. I love it. Today, we were caught up somewhat so we decided to clean. We rearranged and organized. It is so nice to work in the surgery center now. We labeled everything so we know exactly where things are. So wonderful! I am so excited about returning to work tommorrow!

1 YEAR ANNIVERSARY!

Today is our 1 year anniversary. I have had the best year of my life. Jason you are my husband, my lover and my friend. Do you know how often I give thanks for you each day? When I watch you sleeping, I give thanks for comfort. When I see you caring for our home, I give thanks for safety. For the person you are, I give thanks. For the trust that lives between us, I give thanks. For your painstaking attention to the details that matter most, for all that we know and all that we have yet to learn together, for sadness, for joy, I give thanks. Words can barely express how thankful I am for our marriage. I LOVE YOU SO VERY MUCH!!

Our Anniversary Weekend

Jason and I just got home from our anniversary weekend in New Orleans. We have the best time. We got up Friday morning and had beignets at Cafe De Mounde. They were wonderful. We then walked around the Riverwalk Mall. Later, we went to the aquarium, insectarium and saw a 3D movie. We had the best time and missed all the rain because we were inside. That night we had dinner at Landry's seafood. It was a very good ending to a great day. Saturday we got up, put our tennis shoes on and went sight seeing. We walked most of downtown. Jason and I had lunch at Cafe Masperos. We napped for a while and then got dressed for a romantic dinner at The Melting Pot. It was a fondue restaurant and was fabulous. They brought out champange with our dessert for an anniversary present. I could not have imagined a better weekend with the man of my dreams!
